90's sportster 1200 tear down

I am ready to order some "build" cd's and need to know which package you recommend. I will be tearing down a 90's sportster 1200 (doner) and primarily assembling a custom sportster bobber on a Paughco frame. The only fabrication will include the tank, seat, rear fender and oil tank mount. I might sub that work out since I do not weld.
